- Brown Sugar

- Evenly mix 1/2 cup of brown sugar, 1 teaspoon of salt and 1/2 teaspoon of ground cinnamon. Leave aside.
- Whisk 2 teaspoons of vanilla extract and 1 egg white until frothy. Toss in 3 cups of cashews and coat evenly. Coat the cashews evenly with the earlier prepared spice mix.
- Spread the cashew and egg mixture on a baking sheet and bake at 150°C in a pre-heated oven for 30 minutes. Let the cashews cool completely before breaking the nuts into smaller clusters and serving them warm with a steaming cup of herb tea.
